Okay, Robertson's, the first original recipe posted to this blog...from Liko! According to Liko, this is real easy, "not your ordinary enchilada recipe" and most of all, ono! Try it and blog your response! Where's your recipe? Share it with the family!
Thanks, Robertsons.

Enchilada sauce:

Beef bullion
Water
Ancho chile powder
Tomato sauce
Sherry
Garlic
Onion
Your favorite Hot Sauce
Cider vinegar
Butter
Cumin
Mexican hot chocolate powdered

Enchilada:

your favorite shredded meat of choice
Cheese
Olives

Prep:

In another bowl add your shredded meat, coat meat with some of your home made enchilada sauce add some cheese and some garlic powder and onion powder. Set aside for stuffing.

Tortillas - slightly fry your corn tortilla in a warm oil bath just enough to keep from cracking. Then dip the tortilla in your warm enchilada sauce.

Put Tortilla in baking pan, stuff and roll putting the open end into the pan, closed end facing up. continue until the pan is full top with Enchilada Sauce, Sliced Olives and Cheese.

Finish by putting the pan into the oven @ 375degrees for about 20-25 minutes

Cilantro Lime Rice:

Cooked LONG GRAIN RICE. Not sticky but Fluffy.
Finely chopped cilantro
The juice of a lime
Salt

Prep:

In another bowl add your long grain rice, add enough cilantro to see green speckles, squeeze about a whole limes worth of juice into rice and add a little bit of salt.
